Signs of harvest, one of the most significant seasons on the Italian calendar, prevail from early to late autumn. Across the regions of central Italy - Lazio, Tuscany, Umbria and Le Marche -every whiff of fresh air, the changing textures of the forest and sprawling countryside colored in golden amber and hues of cranberry and aubergine, signal the season. Locals carry away sacks loaded with chestnuts for uses in regional dishes. Chestnut production ranges from flour, to marmalade, marron glacé, cakes and other sweets. Chestnuts are used to prepare roasts, stuffing and sauces. And simple, roasted chestnuts are a favorite on cool fall and winter nights. Just thirty to forty kilometers from Rome, there are woods abundant with chestnuts and mushrooms. You can spend a weekend foraging the woods for edible species of mushrooms, searching for the wild and wonderful truffle, trekking through the woods, or visiting local and regional sagre, fairs that celebrate the bounty of the harvest, where unique Italian foods can be sampled. You'll find chestnut festivals in many towns and villages during November. Restaurants throughout the region offer seasonal regional cuisine highlighting truffles, chestnuts, wild mushrooms and newly pressed olive oil.
